Cinnamon. Bun. Pancakes.

THIS IS NOT A DRILL PEOPLE.

Saw a video on these yesterday and decided to try making them sans recipe this morning, for the fam.

Preface: I DESPISE pancakes. But something about these just drew me in.

The result was an absolute SMASH success, and they’re VERY easy to adapt into Gluten Free/Dairy Free, with a few subtle tweaks. (The pancakes pictured are in fact, gluten and dairy free.  Allergy-based, not fad-diet. ;) )

Any instance of FLOUR can be replaced with All Purpose GF Flour.

Any instance of MILK can be swapped out for Almond Milk, Soy Milk, Etc.

Any instance of Butter can be swapped out for the spread of your choice. I used vegan becel.

 

RECIPE:

Pancakes:

1 cup All Purpose Flour

2 tsp baking powder

pinch of salt

2 tbsp Sugar

^ Whisk all those together in a bowl until combined.  If you REALLY need to, add any other things you normally do, here (some people throw in cinnamon, nutmeg, etc… you don’t need to with these, trust me.)

1 egg

2 tbsp melted butter

1 cup milk

1/2 Tbsp Vanilla

^ combine all of these liquid ingredients in a medium bowl, or POURABLE container.

Add the dry TO the wet ingredients, then stir to combine (leave some lumps, it shouldn’t be ultra smooth.)

 

IF MAKING GLUTEN FREE: Allow to sit for about 5 minutes, then add another 1/4 cup of milk.

 

Cinnamon Swirl” part:

1/4 cup butter, softened.

1/4 cup brown sugar

as much cinnamon as you can handle, tbh. (Start with about 1/2 tsp)

^Cream all of these together until it forms a nice “goo pile”. Put that goo pile in a piping bag, or a ziploc bag and nip the tip off.

 

METHOD

Heat a Skillet to medium, and toss a small dab of butter/oil/margarine in there, to grease the pan a bit.

Drop the pancake goo, about two heaping tablespoons at a time, into the skillet, and smooth out into the desired shape.

Take the Cinnamon Goo and create a SWIRL pattern, like this:

(Pro Tip: You can just slap it on there, honestly, since it’ll disappear, aesthetically… but it makes for nice pics, eh?)

 

Cook until you see the bottom edges starting to brown a bit.

Flip it.

hit the top with more cinnamon goo.

Flip it back when you feel the time is right.

after about 30 secs, remove to plate or serve immediately, drizzling the top with…

ICING GOO:

1/4 cup icing sugar

1 tbsp milk

tsp of vanilla (or more. Up to you.)

Pinch of salt.

^Mix together until smooth. It’ll be runny, that’s fine. If it ISN’T runny, add a splash more milk. You want a THIN paint consistency.

 

Voila. Your pancake game just went up like, 9000 levels.
